Anyone who knows me knows how much I love fajitas. Tonight I decided to use the spices used in fajitas to make a spicy chicken meal.
To make this you will need:
3 chicken breasts
Fajita spice packet
Cooking bag and tie (think the so juicy ones but just the bag and tie)
Chips/potatoes to make your own chips
Salad to serve
Simply put the chicken in a bowl and add the spices. Mix together using your hands, ensuring all the chicken is covered in spices.
Place in the bag, tie the bag at the top and make 6 small holes at the top of the bag. Place in a roasting tin and put in a preheated oven at 200C gas Mark 6 for 40 minutes.
After 20 minutes add the chips (I used the remaining spices to lightly season the chips prior to putting them into the oven)
Ensure chicken is cooked through and serve with salad

Lasagne Recipe
Tonight I made Lasagne for the first time for myself and my boyfriend. I can't believe I haven't made it before to be honest as I love eating it when I go to Italian restaurants. It was a bit hit and miss as I didn't have a recipe to follow, I just made it up as I went along really. If you would like to make it, this is what I did:
Serves 2-3 people
Ingredients:
Lasagne Sheets (I used 6 sheets in total)
Dolmio Red Sauce
One medium onion sliced
Two medium carrots peeled and sliced
500g mince
Grated Cheese
New potatoes and salad to serve
Method:
Fry the onions in a small amount of oil, place in a bowl
Brown the mince, add the onions and carrots
Mix in the red sauce and pour a layer into a ovenproof dish
Place a layer of lasagne sheets over the mixture and then spoon another layer on top
Place a second layer of pasta onto the mixture and then grate cheese over the top
Put in a preheated oven at 200C Gas Mark 6 for 30 minutes
Boil the potatoes and chop the salad

Chocolate Brownie Recipe
I have made these chocolate brownies twice now and both times I have had people telling me how nice they were so I thought I would put up the recipe so others can make them and share the deliciousness!
Ingredients:
60g Plain Flour
60g Cocoa Powder
200g Chocolate
1 tsp Vanilla Essence
100g Butter
250g Caster Sugar
4 Medium Eggs
Method:
-Melt the chocolate by breaking it into small pieces in a bowl and placing it above a measuring jug filled with boiling water, stirring every so often until melted.
-Meanwhile, place the butter and sugar into a mixing bowl and whisk together.
-Gradually add the eggs to the mixture and whisk to mix. Add the vanilla essence and whisk.
-Add in the cocoa powderm flour and the melted chocolate to the mixture and whisk until smooth in texture.
-Grease and line a baking tray with greaseproof paper and spread the mixture evenly.
-Put into a preheated oven at 180 for 20 minutes until risen. Remove from the oven and leave to cool for 10 minutes until cooled slightly. Serve with cream or ice cream.
